Honey processed coffee involves not fully removing the fruit from the coffee bean while drying. This creates a residue called "mucilage" which resembles sticky honey. It creates a complex cup and results in florality and sweetness. Owners of this farm, Nicolas & Angela, are known for their contagious smiles when visitors arrive. They choose to use the honey process because it conserves water. We love this coffee for it's notes of brown butter, florality, and apricot.
